White crystalline powder. The relative density is 1.86 and the refractive index is 1.510. Easily soluble in water (lOg/lOOmL, 20 ℃) and ethanol. It is hygroscopic, the aqueous solution is acidic, and the pH value of 1% water is 4~4.5. It decomposes into sodium metaphosphate at 220 ℃. Water solution and dilute inorganic acid are hydrolyzed to phosphoric acid when heated. Acid sodium pyrophosphate is slightly hygroscopic and forms six crystalline hydrates after absorbing water. When heated to above 220 ℃, it will decompose to generate sodium metaphosphate.
Application
In food industry,
1)It is used as a starter, to bake food, and to control the fermentation speed;
2)It is used for instant noodles to reduce the rehydration time of finished products and prevent them from sticking and rotting;
3)It is used for biscuits and cakes to shorten the fermentation time, reduce the damage rate of products, loosen and tidy the pores, and extend the storage period.
