Purpose and Application
In terms of food, it is used as a quality improver for cans, fruit juice drinks, dairy products, etc. It has the properties of polymerized pyrophosphate, emulsifying, dispersing, preventing fat oxidation, improving the viscosity of casein, and inhibiting the food easy to be oxidized and fermented. Crystalline and anhydrous sodium pyrophosphate are rarely used alone, and are generally used together with other condensed phosphates after preparation.
In industry, the mixed preparation of sodium pyrophosphate and sodium polyphosphate can be used as elastic reinforcement.
